Unique, colourful and extravagant, these are the attributes of the heartland of India, Punjab. Popular and distinguished across the globe, the culture of Punjab is indeed overwhelming. The delicious Punjabi food appeases your taste buds like never before. Colourful fancy clothes and Bhangra attract you like nothing else. When you visit Punjab, you can experience hospitable and heartwarming vibes. Punjabis are known to be very helpful, welcoming and proud people. They welcome everyone with open hearts (and of course a glass of Lassi and typical Punjabi food). They celebrate their festivals with great zeal and zest, with great food, music, dances and revelry. The beauty of Punjab is as magical as it becomes.

Punjabis are mainly divided into two communities: Khatris and Jats. They've been involved in agriculture for a long time now. But now, trade and commerce have also opened up in the state. A large population still follows the joint family system which has now turned out to be unique. The feeling of togetherness can be easily felt here as they promise to be with each other in moments of sadness and happiness.

Punjabis are very particular about their traditions and relations. Every festival or ceremony have predefined rituals which are strictly followed. May it be birth or wedding, hair cutting or a funeral, the adherence to rituals is a must which according to them strengthens a relation and displays a proper social cordiality.

Food in Punjabi Culture

One of the favourite cuisines of Indians and other communities outside, Punjabi food is rich in flavours and spices. With overflowing ghee on the chapattis, the food here is considered for the strong-hearted! Lassi is the refreshing drink here and is also known as the welcome drink. It's a very heavy dose of milk, especially for those are not from Northern India.

Makke di Roti (maize bread) and Sarson da Saag (mustard leaf curry) is another traditional dish of Punjab. There are many other foods like Chole Bhathure, Rajma Chawal and Paneer Naan, but one of the humongous favourites is Tandoori Chicken!  

Dresses in Punjabi Culture

The traditional dresses of Punjab are very colourful, unique and vibrant. Women wear Salwar kameez (Salwar is the bottom wear and kameez upper). These clothes are intricately designed and beautifully embroidered at homes in multi colours. Men wear a Turban with great pride. Initially, Hindus and Muslims also used to wear turbans, but now Sikhs can be only seen wearing them. Kurta is worn on the upper body, and Tehmat which are the baggy and balloon-ish Pyjamas are worn on the lower portion. Footwear preferred is Jooti which has been the traditional footwear worn by men and women for many years.

Folk Dances of Punjab

There are many folk music and dances which are hugely popular in Punjab and the rest of the country. One of them is Bhangra which has also become immensely popular in the west. This dance form began many years ago when Punjabi farmers used to perform to welcome the harvest season. Giddha and Sammi, Luddhi and Dhamal are some other popular dances in the region. Punjabi music has become popular in Bollywood too. Punjabis are known for their revelry and music forms an essential part of it.

These dance forms are mainly performed in Baisakhi Festival. The performances, especially involving men, are given on the beats of drum and music. People wear Kurta and Tehmat (garments made of silk and cotton) with Turban on their head and a handkerchief in hand during the performances.

Language and Religions

The official language of the state is Punjabi, which is also the local language used for communication. Although there is only one local language, there are many dialects used diverse region to region. Some of the local dialects are Doabi, Ghebi, Malwai, Pahari, Shahpuri, Rachnavi, Hindko, etc. Interestingly the script for Punjabi language is Gurmukhi in India and Shahmukhi in Pakistan.

There are many religions which exist in Punjab. But the major population comprises in the Indian state of Punjab are of Hindus and Sikhs. In Hindus, Khatris are the most prominent, while Brahmin, Rajput and Baniya may also be found. The Sikh population is particularly high in the state owing to the origin of Sikhism. There are many Sikh religious centres in Punjab, not to forget the most famous Golden Temple in Amritsar which witnesses huge footfall from around the world. Some of the people in Indian Punjab are Muslims, Christians, and Jains.

Wedding Customs in Punjab

Punjabi Wedding

The prewedding rituals start with the Roka, which is an unofficial engagement signifying the acceptance of the relationship by the two families. Then comes Chunni Chadhai followed by Mangni/Sagai which is the official engagement with the couple exchanging the engagement rings. A couple of days before the wedding, Mehendi artists are called in on the occasion of Mehendi to create intricate designs on the hands of the bride joined by all the female friends and family members. Usually on the same evening is the musical night known as Sangeet which is pretty much the same as a bachelorette party. After the merry and joyful evening of Sangeet, some traditional rituals are set in motion starting with Kangna Bandhna, Followed by Choodha Chadhana and Kalide which take place in the Bride’s house. Haldi and Ghara Ghardoli are two rituals that take place for both, Bride and Groom when they are covered with a thick paste of turmeric and sandalwood mixed with rosewater and mustard oil. Bride and groom visit their nearest temple and are bathed with holy water and start getting ready for the main part of the wedding. Sehrabandi and Ghodi Chadna conclude the pre-wedding rituals.

The main wedding function starts with the Agwani and Milni which is a ritual to welcome the groom and his party to the venue of the wedding. Followed by the welcome is the Varmala or the exchange of the garlands between the bride and the groom. The Groom is then offered a bowl of water and a bowl of a sweet drink called Madhuperk. The ritual of Kanyadaan is fulfilled by the father of the Bride and asks the Groom to take good care of her. After the Heart touching ritual of Kanyadaan is Mangal Phere where the couple circle the sacred fire four times and the couple is declared Married. The wedding day concludes with a sacrificial ritual offering rice flakes to the sacred fire thrice called Lajhom followed by Sindhoor Daan which is the ritual of the groom to anoint the bride's forehead and the hair partition with Sindhoor.

Post-wedding games are the fun part of every wedding where the families and friend from both sides take part actively. After the celebrations and games are the most heart touching moments for the festivities when the bride has to say bye to her parents and tears rolling down the cheeks is a normal scenario in these moments. The bride is welcomed to the groom's house and a final ritual called the Muh Dikhai marks an end to the ceremonies and the start of a happy life together.

Literature and Philosophy

Punjabi Literature mostly comprises the writings from Sikh Gurus and some poetry too. The writings of Guru Nanak also known as The Janamsakhis are one of the oldest literature books found. Some spiritual philosophies of yogis like Gorakshanath and Charpatnah are also available. But the major literature began with the initiation of poetry and Sufi music and ghazals. Some famous stories include Heer Ranjha by Waris Shah, Mirza Sahiba by Hafiz Barkhudar and Sohni Mahiwal by Fazal Shah. Modern Punjabi writers include Bhai Vir Singh, Puran Singh, Dhani Ram Chatrik, Amrita Pritam, Baba Balwanta, Mohan Singh, and Shiv Kumar Batalvi.

Punjabis are high spirited and liberal people. Residing in the heart of India, they are soft natured people who celebrate every event and festival with utmost zest. They are lively and vibrant with a vibrant history and culture. They enjoy liquor and revelry as much as they enjoy Lassi and folk music. Punjabis can now be found in many parts of the world especially the USA and Canada. But suffice it to say, they have shifted the land, but their culture is imbibed in them even today. They celebrate their festivals across the globe and welcome others to be a part of their culture. And to less surprise, Punjabis are loved all over the world.

PUNJAB: The History, Culture and Food of the Region

Punjab - The land of the five rivers, Pakistan's largest province by population and home to 60% of the country's population... as well as where my family originate from!

In case you missed my earlier post, this is a weekly series in which I share some information about each of the regions in Pakistan and share a specialty recipe from the area.

This week, I'll begin with Punjab.

The Province of Punjab is located in the East of Pakistan. It is the only province to border every other province of the country as well as the Enclave of Islamabad (Capital City of Pakistan) and the Pakistan Administered Azad Jammu and Kashmir. The province of Punjab also borders the Indian states of Punjab and Rajasthan, and the Indian Administered Jammu and Kashmir.

Punjab is the second largest province by area (205,344 sq km) after Balochistan but the largest by population (110 million), around 60% of the national population!

The Provincial Capital is Lahore which is also a historic cultural center of the wider Punjab region. Other major cities are Faisalabad, Rawalpindi, Gujranwala, Multan, Bahawalpur, Sargodha and Sialkot.

Punjab has had many names over history depending on the ruling empire/dynasty and their language. But their commonality lies in recognizing it as a land of five rivers as there are five major rivers that run through the Punjab region, Punjab was referred to as:

Sapta Sindhu – land of the seven rivers in the Rig Veda;

Pentapotamia – region of five rivers by the Greek;

Panchanada – land of the five rivers in Sanskrit; and finally

Punjab – land of the five rivers by the Persian.

The rivers Chenab, Jhelum, Ravi, Beas and Sutlej flow via the Panjnad river into the Indus River to the Arabian Sea.

Four of the five great rivers of Punjab are in present day Pakistan’s Punjab province.

Punjab was part of the Indus Valley civilization and is home to Harappa, an ancient bronze age fortified city, showing evidence of modern urban living despite being almost 5000 years old!

The region was invaded and ruled by different empires and dynasties including the Aryans, Persians, Greeks, Egyptians, Afghans and Mongols, each bringing their own influence to the region.

Punjab was predominantly Hindu and Buddhist before Muhammad bin Qasim conquered in 712 AD, and Mughals controlled from 1524-1739, giving Punjab architectural feats such as the Badshahi Mosque ( photographed above ) and Lahore Fort.

Punjab was under the Sikh empire from 1799-1849, mostly under the rule of the Sikh Empire's first ruler, Maharaja Ranjeet Singh, known as Sher-e-Punjab (the Lion of Punjab). The British took control in 1849 after the first and second Anglo-Sikh Wars; Punjab was the last territory to be merged into British India!

Punjab was the center of rising rebellion and the heart of the independence struggle.

India was divided by religion by the British (and I mean that in every sense!) known as the Partition. India gained independence and a new country was created, Pakistan, in 1947 when the British literally up and left, after setting foot in the subcontinent in 1608. The idea was to create a Muslim majority Pakistan and Hindu majority India. People would have to migrate to their designated country depending on their religion.

New borders were drawn but Punjab was divided, along with Bengal in the East of India. Muslim majority areas of Punjab became West Punjab, the present day Pakistani province of Punjab, whilst Sikh and Hindu majority areas became East Punjab, present day Indian states of Punjab, Haryana and Himachal Pradesh. And when I say majority, some districts were only so by a small fraction. People became refugees overnight.

Partition is known to be one of the largest mass migrations and one of the most traumatic events of the 20th Century. Both sides committed atrocities against fleeing refugees, and families were divided and lost forever. It is absolutely heartbreaking what happened and there are so many horrifying stories from this time. The violence has created tension and wars between the two countries to this very day.

Punjab lost its Provincial status in 1955 and merged into a single province of West Pakistan, but regained it in 1972 when East Pakistan seceded and Bangladesh gained independence. Major battles took place in Punjab in the wars of 1965 and 1971 between India and Pakistan.

Peace process began in 2004, and trade and people-to-people contact through the Wagah border are common.

Punjab is predominantly plain level with some hilly areas in the Northwest and Southwest. The Potohar Plateau, hosting the country's major oilfields is adjacent to the mountains, and the Cholistan Desert Belt can be found in the Southeast. The Indus, Jhelum, Chenab, Ravi and Sutlej flow through this province, originating from the Himalayas and into the Arabian Sea. See diagram above .

The temperature in Punjab can range from −2° to 45 °C, but can reach 50 °C in summer and can touch down to −10 °C in winter. Climatically, Punjab has three major seasons:

Hot weather (April to June) when temperature rises as high as 43 °C.

Rainy season (July to September). Average rainfall ranges between 96 cm in the sub-mountain region and 46 cm in the plains.

Cold / Foggy / mild weather (October to March). Temperature goes down as low as 4 °C.

Punjab contributes a significant proportion of the countries GDP, ranging from around 50 to 60%. The main industries are agriculture, manufacturing and service. The main crops are cotton, wheat and rice and Punjab contributes 68% of the annual food grain production in the country.

Punjabi is the major and native language of the province. It is written in the Shahmukhi script (Gurmukhi being its Indian counterpart).

Urdu and English are the near exclusive language of broadcasting, public sector and formal education despite the majority of people speaking the Punjabi language.

Saraiki is spoken in parts of South Punjab and Pashto is spoken in parts of Northwest Punjab.

Punjabi people find their commonalities in the Punjabi language, rituals, music, dance, food, and dress despite religious differences.

Traditional dress of Punjabi men and women is the salwar kameez, which includes a dupatta (scarf) for the women.

Many famous works of literature and folk tales like Heer Rhanjha, Sohni Mahiwal, Mirza Sahiban have come from this land.

Punjabi music has many genres like classical, folk, bhangra, Sufi and qawwali. Here are some absolute bangers to come out of Punjab, Pakistan:

I'd also like to briefly mention Bewafa by Imran Khan which has become sort of a cult classic and ballad for heartbroken young Punjabis all over!

Punjab is full of beautiful Mughal era landmarks such as Lahore Fort, Badshahi Mosque, Shalimar gardens and Sheesh Mahal in Lahore.

There are many historical sites to see like the ruins in Harappa, Taxila (housed one of the earliest universities in the world), Jahangir's tomb, Katas Raj Temples, Rohtas Fort, Derawar Fort and many more!

There are many Sikh shrines in Pakistan's Punjab province, including the birthplace of Guru Nanak (founder of Sikhism) at Nankana Sahib. My grandma's village is also in this district!

Punjabi food is heavily influenced by the agricultural and farming lifestyle of the people from ancient times, so can be meat and dairy intense but has a lot of fresh vegetables, pulses and grains.

Punjab is famous for tandoori cooking (food cooked in a clay oven), so things like tandoori naan, roti and kebabs.

The most well known Punjabi meal is sarson da saag (mustard greens) and makki di roti (flat corn bread).

Veggie dishes include: khichidi, channay , daal, red kindney beans, lobia (black eye beans), saag (greens like spinach and mustard greens), Began ka bharta, kadhi pakora, and seasonal vegetables like bhindhi, karela, lauki, tinday and kadoo. If you browse through my recipes on this blog, they are mostly Punjabi!

The breads are mostly flat breads, leavened or unleavened, and can be cooked in a tandoor, on a tawa (flat pan) or deep fried. Some examples are parantha, naan, roti, kulcha, puri, bhatoora and papar.

Cow and buffalo milk are used for dairy. Punjabis are known to love fresh dairy items like yoghurt, lassi, butter, buttermilk, ghee.

Pakistani Punjabis are also meat lovers and dishes like biryani, kebab, keema, tikka, karahi, korma, haleem, paya can be found in abundance around the region. I hope you can now understand why it's not easy to be veggie around my clan!

Desserts are mostly dairy based like kheer and kulfi, and halva is also popular sweet dish.

My thoughts

My mind has been blown learning more about Punjab and it's history and on a personal level has been very eye opening, heart wrenching and healing. I was born and brought up in the UK but have constantly been surrounded by Punjabi culture, the good, the bad and (can get) ugly! It's been fascinating to get a deeper understanding of the land of my ancestors and why people, places and things are the way they are, and my research will not stop here.

I only learnt about British history at school and there was hardly any mention of the Indian subcontinent, despite it's history being an important part of British history. I think a lot of second generation Pakistani and Punjabi immigrants have an understanding of the Partition but the way we receive the information can be so limited, whether it's been glossed over or simply too painful for our relatives to speak about, which is understandable considering the horrors that took place.

My take from this is that Punjab and the people of Punjab are beautiful, strong and fearless, be it India or Pakistan. We have a lot to work on and heal from, and that's ok. But the culture is so strong that it can withstand national and religious differences, survive AND thrive. If there's one thing I can learn from my ancestors is to stay strong, stand my ground and speak my truth.

– Chole Bhature – Spicy chickpeas served with fried leavened bread (bhature).

– Amritsari Fish – Fried fish from Amritsar coated in a spicy, gram flour batter.

– Kulcha – Dense leavened bread with onion, potato or paneer fillings. 

– Lassi – Sweet or salted yogurt-based smoothie drink. Can also contain fruit.

– Gur Pare – Soft jaggery cubes served as a dessert or snack, sometimes with nuts.

These and countless other dishes form the soul of Punjabi cuisine. From hearty curries to snacks and sweets, the variety is immense.

Punjabi Food Outside Punjab:

Thanks to Punjabi diaspora across the world, Punjabi cuisine has gained global popularity. Punjabi restaurants are found in most major cities worldwide. Certain dishes like tandoori chicken and naan bread have become so mainstream that they are not immediately associated with Punjab by many anymore.

Still, for the authentic taste, aroma, and experience of Punjabi cuisine, one must head to the food streets of Amritsar, the dhabas along the national highways, and homes across Punjab. Nowhere else will you find the regional nuances and sheer variety of Punjab’s incredible cuisine.

The Melting Pot of Influences on Punjabi Cuisine:

Punjab’s location near historical trade routes has led to an amalgamation of various influences into its cuisine. Here are some of the most prominent:

Mughlai – The Mughal Empire ruled over Punjab, leaving behind lavish dishes like biryani, kebabs, korma etc. Rich spices and techniques came via Mughal royal kitchens.

Persian – Punjab’s proximity to Persia brought aromatic spices, rice dishes, and dry fruit-based dishes to the region. Food was elevated to an art form.

Afghan – Invading Afghan armies and refugees brought tandoor cooking and the breads like naan and kulcha. Their love for meat dishes is evident too.

Portuguese – The Portuguese introduced potatoes, tomatoes, and chillies – now core ingredients in Punjabi cooking – after trading in India.

Britisher – The British Raj influence brought breads like chapati, cutlets, custards and popularized chai. Brewed black tea became a staple. 

Sikh Community – The langar tradition of Sikh temples contributed sarson da saag, dal makhani, stuffed parathas and other staple dishes.

This unique amalgamation over centuries resulted in the flavorful cuisine that Punjab is now renowned for. The melting pot of influences resulted in a diverse culinary tradition.

Some of the other common ingredients are mustard oil, vinegar, zarda (a coloring agent), fenugreek seeds, cumin, dried coriander seeds, and black pepper. Punjabi cuisine contains a variety of vegetarian and non-vegetarian dishes, prepared traditionally.

The most common Punjabi breakfast dishes are daliya (porridge), aloo or gobhi parantha with lassi and unprocessed butter. The regular dishes for lunch are wheat roti (indian flatbread) with kaala chana (black chickpeas) and dahi (curd), rajma masala, Amritsari kulcha, kadhi and tadka dal . A typical Punjabi tandoor is cylindrical in shape. It was originally made of clay with layers of insulating material like concrete or mud on the outside. This type of a clay oven was originally popularized during the Mughal reign in India. Now with the increasingly hectic life style, tandoors are no longer a part of everyday family life. Some of the other frequently used traditional kitchen equipment from a Punjabi household are madhani (wooden churner typically used for churning out butter), chakla belan (traditionally made of wood, chakla is a small round platform to make common Indian bread called roti and belan is a rolling pin), kadoo kas (an equipment used for grating like making puree of tomatoes which is heavily used in making Butter Chicken), patila (made up of brass and used to prepare a dish called Patila Chicken), dori danda (it is used for pounding leaves to make chutneys and powdered spices). Spices are traditionally ground in a ghotna (a kitchen equipment to grind spices and other ingredients).

Winter Delicacies: Sarson da Saag and Makki ki Roti

The state of Punjab lies in northern India and experiences extreme temperatures during the summer and winter seasons. The winter months start from early December and last till the end of February or early March. The temperature during these months can reach as low as two degrees. Chilly mornings and freezing nights call for warm foods and beverages. There are numerous dishes made exclusively in the winter months of Punjab. For example, the famous sarson ka saag and makki ki roti, cholle palak or palak paneer . Apart from the main dishes, winter months bring a variety of healthy bites famously known as Panjeeri, laddoos and variations of jaggery based dishes to keep the body warm.

Sarhon da Saag (Sarson ka Saag) is the most loved winter dish from the northern state of India, Punjab.During the harvest season, mustard fields are covered with sarsonkephool (mustard flowers). However, it is from the green mustard leaves that saag is prepared. From the month of November till February, sarson ka saag is consumed with joy. Saag is a combination of three types of leaves, that is, sarson (mustard leaves), palak (spinach) and bathua (white goosefoot leaves) to add colour and thickness. It is cooked with various spices and topped with a generous amount of desi ghee or white butter.

One of the most celebrated festivals in Punjab is Lohri . It marks the end of winter and the harvest of Rabi (winter) crops like wheat, barley, mustard and peas. On the day of the festival gudd-rewri (sweet made of jaggery), peanuts and popcorn are consumed. As a part of various rituals, it is considered auspicious to eat gajjak (a sweet made of sesame seeds or peanuts and jaggery), sarson ka saag and makki ki roti and til rice (rice made with jaggery and sesame seeds) on the day of Lohri . Sarson ka Saag, is best served with Makki ki roti, unprocessed butter, ek mukka maar kay gannda (hand-pressed onion), gudd (jaggery) and a big glass of namkeen or plain lassi .

The Famous Amritsari Kulcha

There are various cities in Punjab which are famous for its authentic food. These places attract tourists across the globe especially for food and experiencing the culinary specialities of Punjab. Places like Amritsar, Patiala, Jalandhar, Ludhiana are some of the most popular ones. The historic city of Amritsar is home to the world-famous Sikh shrine, Harmandir Sahib, famously called the Golden Temple. The narrow lanes of Amritsar are famous for their hidden dhabas or food stalls offering delicious food. One such dish is the famous Amritsari Kulche (a variant of naan). Traditionally, Kulche are made using the tandoor (an oven with origins in Central Asia). In this part of rural Punjab bread is baked in communal gatherings known as sanjha chulha . Historically, women used to gather around a common tandoor to bake fresh bread, in the process they also developed bonds whilst talking and cooking. The partition of India in 1947 involved mass movement of people from Pakistan and India. Many settled in the region of Punjab (India) and brought their traditional style of tandoori cooking with them. As a result, tandoor became an essential part of cooking among the local restaurants and eventually, throughout the country. Many of the existing cuisines were altered due to the amalgamation of different styles of cooking and a variety of recipes. For example, cholle were given a new alternative which came to be known as Pindi Cholle . Many such variants were offered by the dhabas which were opened in the lanes of Amritsar.

The land of Punjab consists of sandy loam soil which is great for growing vegetables like carrots, radish, pea, cauliflower, turnips and spinach. These are grown in the winter months and are considered to be extremely beneficial for the human body. Apart from creating famous desserts like gajar ka halwa , vegetables like carrot, radish, turnips and cauliflower are used to create the pickles ( achaar ). Pickles of India are deeply rooted in the Indian cooking and eating habits. The art of cooking without fire reminds one of childhood, where vacations were filled with assembling the ingredients carefully, helping the grandmother in preparing achaar and then waiting for it to be ready.

In India, pickling is considered to be one of the best ways to preserve a food item. Once preserved, it will have longer shelf life and it will not need refrigeration, thus making it ideal for it to be carried on long-distance journeys. Gobhi-gajar-shalgam ka achaar (cauliflower-carrot-turnip pickle) is a special from Punjab. It is a must have pickle during the winter season as these vegetables are available in plenty during this season. Many families make this pickle as soon as the vegetables are available in the market and enjoy throughout the season. This achaar is enjoyed with almost every winter dish especially with various stuffed paranthas . It is also savoured with the famous breakfast dish, Cholle Bhature .

The Evolution of Punjabi Cuisine: Lifestyle, Gender & Farming

Majority of us have felt a connection with others through food whether it be at a langar hall, protests, events or inside our own homes. Take our word for it; food is one of the best ways to bring people together. In our case, Punjabi cuisine takes the win and is a staple in our everyday lives. We have had our mothers pack us pronthies when traveling afar to take a little bit of home with us. This got us wondering about the origins of Punjabi cuisine; how it became a means of our lifestyle, how gender and farming play a role and connecting to our religious upbringing. 

Let us take a step back and ask ourselves what comes to mind when we think of the most popular dishes in Punjab. Surely, saag & makki di roti, kheer, and various street foods will make the list. A lot of the popular dishes originated based on how Punjab is set up; weather conditions, what is in season, and the working conditions. Punjabis are the masters of making multiple dishes utilizing one main ingredient. Take fresh milk for an instance; it is abundant in many pind (village) households since they have their own cattle. This explains homemade ghee, dahi, lassi, kheer, paneer, and the list goes on. These foods usually help farmers survive long hours in their keth (field) by giving them enough calories and keeping them full. After speaking to Sadaf Hussian (food historian based in India), we were told to hit the bazaars to get a better grasp on Punjabi food as “khana ki roh raiste peh hoti hai,” (“the soul of food is found in the streets”) and we could not agree more. A cha stall will give you more insights of what is happening around the state and a grasp on our culture versus going into a coffee shop. 

Lifestyle and Gender Equality

Punjabi cuisine has truly become a part of our lifestyle from being a dominant part of our upbringing to a connection to our ancestors and roots. We grew up watching our grandmothers making specialties such as; pinni, kheer, and khoa while our mothers cooked the main meals for the day. Since men would be working outside, it became a norm to not include them in the kitchen. This is one norm that we are trying to break everyday in hopes of normalizing men cooking in Punjabi households. We spoke to Prav from @foodylens about his experience being a male in a Desi household who has a passion for cooking:

“Thankfully, I come from a very supportive and open minded family who has encouraged me to continue my passion for cooking. However, I am aware this is not the case with all men who share a passion for cooking. From what I have heard of other people’s experiences, they can often be discouraged and mocked for their interest in cooking, as it is not seen as the norm for a male to cook in some households. I am from the Punjabi culture and food is an essential part of our identity. Yet, sadly this all comes down to patriarchal gender-related stereotypes of women in having the responsibility of nurturing that leads to them being seen as having to cook, even within the 21st century. In my opinion we all work, we all eat and so it should be shared equally. Food creating is an artwork and anyone can fall in love with it, regardless of one’s gender. It is time people start understanding this and work together to help remove these unfair ideologies. ” 

The biggest commonality we found through cooking in a Punjabi household is that women are mainly responsible for running the kitchen. While, men are typically frowned upon when trying to cook or clean. Many have witnessed this first hand with our brothers and cousins being taught to work and make money. While women were encouraged to learn how to make rotiyan and serve so that one day they can become a good daughter-in-law. Although this mentality is slowly changing with our generation, it is a struggle that many of our Punjabi sisters have gone through and are currently facing. It is important for our male counterparts to stand with women to fight these gender inequalities. 

Langar Seva

Langar, established by Guru Nanak Sahib, was designed to maintain equality amongst all people regardless of religion, caste, gender, sex, color, creed, race, social status, or age. The passion to serve is in our blood and we do so through our food. Growing up, we have seen our moms lead their respective Gurdwara kitchens where women come together to make langar. The ideology that women should cook is seen in our Gurdwaras, although it varies between Gurdwara (some you only see men in the kitchen or a blend of both genders) but in general we have noticed women being the predominant cooks while men serve. 

Along with Guru Nanak Sahib initiating langar, Mata Khivi played a huge role in organizing and strengthening the langar system, which she continued to nurture into Guru Arjan Sahib’s time. She preached equality and encouraged women to lead a life that was independent. Interestingly she is one of the few people mentioned by name in Guru Granth Sahib ( Ang 967 ):

You can see here that, langar is based on what is readily available, and the importance of milk was acknowledged during our Guru’s times.

There are many references to farming in Gurbani. Like this one revealed to Guru Nanak Sahib ( Ang 595 ).

Which reminds us of the farmers protest in India; it has caught worldwide attention and has held a powerful connection with Punjabis in particular. Farming and the mindset to grow, cook, and share food is a part of our being no matter our geographical location. The farmers protest has shown us coming together as a community via our multiple rallies, protests and social media presence worldwide. Another beautiful outcome has been the respect gained for our sisters, mothers, and grandmothers fighting alongside our brothers, fathers, and grandfathers. An assumption has been made that only men do farming, when according to Oxfam India , “the agriculture sector employs 80% of all economically active women in India; they comprise 33% of the agricultural labor force and 48% of the self-employed farmers.”

Another interesting take away from the farmer’s protest is its role in reshaping the gender roles and stereotypes that we had so concretely ingrained in our culture. We see images of men at the protest washing their own clothes, folding their blankets up neatly, sweeping the streets with a jhaadu (broom), cutting up vegetables, cooking, serving and nurturing the children, plants and environment at the protest sites. On the flipside, in many households the men came to partake in the protests while the women stayed home to run the household, family and farms. They became head of household and are managing the farms and farm animals in the absence of their husbands. Then there are also the women who came to participate in the protest and have been there side by side with their male counterparts from day one in the cold, harsh weather, shattering the stereotype of women as fragile or something that needs to be protected. All of these forms of contribution and participation are equally important and show us that gender is a construct, not a biological fact and it can be challenged and it can be changed. 

Staying Connected to Your Roots with Food

Punjabi food has become a means of our culture, everyday lifestyles and we can owe this all to our beautiful history from the concept of langar to farming. The world has come to connect with our food through folklore, songs and our culture. Let us all reflect on our gender bias and become a generation which sees both men and women side by side whether it be in our Gurdwara kitchens or at home.

Punjab, the land of five rivers, has always fascinated people — be it its food, or its larger-than-life culture, its big, fat weddings, the fun and joy of its music, and much more. Despite being from a Punjabi family, I’ve barely spent time in the state since my family has always been on the move. So, recently, I took a month off and toured the iconic as well as lesser-known corners of Punjab. I came back with a plethora of sounds, smells, tastes and sights that define the history-soaked land better than the stereotypes:

Sounds and Silence

On my second day in Adampur, a small town in Jalandhar district, a seemingly quiet afternoon was suddenly interrupted by a rattling, rhythmic buzz. Instinctively, my cousin grabbed the largest steel mug from the kitchen and walked out to meet the source of this noise — a semi-automatic sugarcane juice machine. This brings about the ritualistic 10-minute everyday communion of neighbours, and a whole lot of chatter.

The quiet afternoons in these corners of Punjab are often redolent with the smell of masalas — of garlic being fried and added to a batch of freshly ground onion. From the kitchen below, there is the faintest sound of the silbatta. The sound of distant laughter and conversational Punjabi punctuates the smell of the occasional bhatti masala on Sundays. As all of this comes together, the wail of a peacock reminds me that this is a land where you are not running at breakneck speed, and that things are a bit more old school.

It is all of this that you wake up to in the numerous cities and suburban towns of Punjab. Each smell and each sound, from the bell of a bicycle to the hark of the vendors, is a character by itself.

Punjabi by Nature

Food, of course, is the centrepiece of any journey that you associate with Punjab. It is a saga of Punjab’s culture, heritage and varies widely even within the state, which I soon realised as I reached Amritsar. I wanted to explore Amritsar through food and through stories of its everyday people. We made our first stop at the legendary Bharawan da Dhaba run by Subhash Vij and his family since 1912. Vij, a third-generation owner of the eatery, has been running it since the last 43 years. When asked what draws people to his eatery from far and how they have managed to retain its legacy for over a century, he said, “ Ann ka nasha toh sabko hai. (Everyone is addicted to food).”

Festive offer

“With every generation, the food preferences change and newer stuff becomes available in the markets and it is natural for people to try something new. But what will never change for us is the feeling of returning to your roots. We will always seek comfort and we will always seek ‘ apna khaana ’. That is the secret of our success,” he said.

These are the very roots that define Punjab’s culinary history. And yet, these traditional colours and smells are not just what is typically publicised as Punjabi khana everywhere.

The food journey of Punjab today is a lot about preserving the past. One such instance is the tandoori roti, which was once extensively made at home. Now, with modern kitchens, new ways of jugaad have emerged. So a tandoori roti which would earlier be made in the common tandoor of the family, is now made in an overturned pressure cooker. Mind you, this isn’t as easy it sounds. The dough is kneaded in a way that it isn’t too firm or too loose, but has ample room for aeration. The little balls of dough are then rolled out into rotis and then dabbed with a little water to make it stick to the cooker. The result is phenomenal, with light tandoori rotis being served with butter and the subzi or dal of the day.

Another such story is the history of rice. Although Basmati rice is grown in Punjab and supplied throughout the country, the Punjabis have a natural inclination towards rotis and parathas. The reason for this was that rice was always expensive and usually cooked only for special occasions. So, the usual rajma-chawal and kadhi-chawal were once enjoyed with rotis and not rice. In fact, cooking rice was so special that one wouldn’t just serve steamed rice to the guests. Even now, if you go to a Punjabi household, you’d notice that they serve a burhani pulao with lightly fried onions, which is best enjoyed without any accompaniment.

Finding your own roots in Punjab is a combination of all of this. From the history of the phulkari artwork, to the stories of every family’s traditions, Punjab is the land of cultures that must be preserved, and not lost in the razzmatazz of new-age restaurants and the set-list of Punjabi food.

In every corner of Punjab, hides stories of a bygone era. As for me, I’ve only begun finding my roots, and the journey is far from over.

Punjabi Culture, Tradition, Food And Festivals

Folk songs, dance fairs, and festivals of love and war, dance, music, and literature are the characteristics of the cultural life of this state. Punjabi literature has its origins in the mystic and religious couplets of the 13th-century Muslim Sufi saint Sheikh Farid and the founder of the 15th-16th century Sikh Panth, Guru Nanak.

Folk Dance and Songs

Dance and song require a lot of entertainment during festivals and celebrations. “Bhangra” and “Gidda” are folk dances of Punjab. With a vigorous screenplay by “Dholak in “Bhangra”, people dance enthusiastically to the tunes of music. It also has other forms, such as jhumar, dhankara, and gatka. Besides, “Gidda” is an important practice played by Punjabi women with “bolis”.

Folk music includes simple instruments such as dholak and dhol drum. “Bhangra” music is popular in Punjab and “Bolis” are sung by Punjabi women. Punjabi songs are very melodious with emotional melodies.

Punjabi Tradition

The traditional dress of men in Punjab is kurta-pyjama with turban and women wear lehenga-kurta as their traditional dress along with Patiala suit. However, the younger generation prefers fashionable dresses according to the fashion scenario.

There is a collection of colours in turban and dupatta. The dupatta worn by women is known as "Phulkari" and men's turban includes various types such as the patka, the pagri, the Kaski turban, and the dhamla. Wearing a turban is its style and is compulsory for all Sikhs.

Punjabi is famous for its extreme interest in arts and crafts. Punjab is described as an arts and crafts art, in particular arts and crafts also include some beautiful scenes. Many things related to the arts and crafts of Punjab are known worldwide for their quality and beauty. "Phulkari" is recognized for its intricate work, shawls in silk are traditionally designed by Punjabi. Other famous crafts of the region include lacquer work.

The taste of our culture - Punjabi Food

Punjabi dishes are very popular in India due to their texture and ingredients. Both vegetarians and meat lovers are never dissatisfied here.

Butter chicken, tandoori chicken, Amritsari naan and kulcha, dal makhani, Saag, Missi roti and many more Punjabi dishes that can be eaten due to their delicious taste.

Punjabi food is very much like Punjabis - rich, full of life and full of flavour. Tandoori food is also popular in Punjab. Apart from tandoori food, the city is famous for its fish dishes such as Machha Sola, Fish Kebab, Fish Tikka, and Amritsari Fish.

Punjabi people are always known for their bread, being a state of agricultural land and wheat. Naan, Kulcha (stuffed maida bread), Tandoori roti, Rumali roti, Missi roti and parathas are well-known varieties of roti. A Punjabi-thali is never complete without lassi or buttermilk.

People of Punjab mostly cook the dish in butter or ghee. The parathas are always served with butter and are called "butter mar ke".

Many religious and seasonal festivals are celebrated in Punjab:

One of the most important festivals of Punjab is the festival of Baisakhi, which is celebrated on the first day of April or May as the New Year according to the Saka calendar. It is considered to be one of the largest harvest festivals in the northwest region. On this special day, the tenth Sikh Guru, Sri Guru Gobind Singh founded the Khalsa in 1699. On this day, Sikhs go to gurdwaras and listen to kirtan. This festival is also marked as the last chance to rest before beginning the harvesting of corn.

Diwali is a time of joy and hope for a bright future in this state. People of all communities participate in this festival to make it grand. In this festival, lighting the lamp symbolizes peace, health, love, and attainment of knowledge. Cattle praise and worship cattle in remote villages of the state as they are their main source of livelihood. The festival also includes the birth anniversary of Shri Guru Hargobind Ji, who was released from the prison of Gwalior Fort.

This festival is celebrated by Sikhs to commemorate their gurus. There are 2 major Guruparvas held throughout the year. The first Gurparva is celebrated in the month of Kartika (October or November) to commemorate the birth of Sri Guru Nanak Dev Ji. The second Gurparva is held in the month of Pusa (December or January) to commemorate the birth of Guru Govind Singh. These days Sri Guru Granth Sahib takes out a procession in which the locals take part with great enthusiasm. The martyrdom of Guru Tegh Bahadur and Guru Arjun Dev is also observed on both days of this special festival. Religious sermons and texts are recited non-stop. The free food is known as 'Langar' is also served equally to the rich and poor.

  • Hola Mohalla

Holi is one of the most famous festivals of Punjab. The Sikh community of Punjab celebrates the 'Festival of Colors'. In the state of Punjab, the festival is popularly known as 'Hola Mohalla' and is celebrated a day after the festival of Holi. The festival also provides him with the opportunity to showcase his martial arts especially 'wrestling'. The festivals here also define Masti in various forms. The festival is held in Anandpur Sahib and is a tradition started by Guru Govind Singh in the 1700s.

Lohri is celebrated in the state of Punjab just before the day of Makar Sankranti. The festival of Lohri is very special for the community of Punjabis. On this auspicious and joyous everyone celebrates fertility and the spark of life. Religious rites and traditions are celebrated with great reverence. People join the moments by singing songs and giving their best wishes. The first Lohri of a newly married bride and newborn child is extremely important.

The festival of Maghi falls exactly one day after the festival of Lohri and is very popular with the entire Sikh community. The locals go for a holy bath and give a lot to charity. Special recipes of this festival include kheer cooked in sugarcane juice. This festival commemorates the heroic battle of Chali Mukte or 40 Liberated Ones who sacrificed their lives to save the life of Guru Gobind Singh.

Sadda Pind is a great place to experience a Punjabi culture. Sadda Pind is a short form of Punjabi village. This place is successful in familiarizing you with Punjabi culture. You can see the people of the village, their language, dress, culture, and tradition with us. Known as the “wheat bowl of India,” the state is also the country’s fifth largest dairy product supplier. So, you can imagine how rich its food selections could be, saturated with milk ( Doodh – ਦੁੱਧ), yogurt ( Dahi – ਦਹੀਂ), cream (ਕਰੀਮ) and cottage cheese ( Paneer – ਪਨੀਰ)!

Punjabi cuisine is a beautiful amalgamation of rich non-vegetarian curries, hearty vegetarian dry dishes, spicy lentils ( Daal – ਦਾਲ), fresh pickles, and an assortment of bread, like Naan (ਨਾਨ), Kulcha (ਕੁਲਚਾ) and Parantha (ਪਰਾਂਠਾ) . What makes Punjabi food stand out is the exhaustive use of a clay oven called Tandoor (ਤੰਦੂਰ) to roast meats and bake bread. In short, earthy and rustic food from farm to table!

Indian cuisine has a tremendous fan following globally, led by Punjabi food. Punjabis were the earliest to form the Indian diaspora in almost every corner of the planet. 1. Butter Chicken

As the name suggests, this dish – called Chicken Makhani (ਚਿਕਨ ਮੱਖਣੀ) in Punjabi – is all about marinated boneless pieces dunked in lots of clarified butter ( Ghiyo – ਘਿਓ) or butter ( Makkhan – ਮੱਖਣ) and tossed in a creamy gravy. It is the most ordered dish in Indian restaurants around the world. However, the ones made in Punjabi households tend to be much more toned down with a homely feel but taste just as divine.

Named after the city of Amritsar (Punjab region of India) where it originated, this is a popular street side food of the region that features heavily in Punjabi restaurants all over. Called Amritsari Machchhi (ਅੰਮ੍ਰਿਤਸਰੀ ਮੱਛੀ) in Punjabi, this is a simple dish of batter fried local freshwater fish called Singhara (ਸਿੰਘਾਰਾ) .

3. Sarson Ka Saag/ Sarson Da Saag

The staple food of Punjabi households whose popularity goes beyond Punjab, Sarson Da Saag (ਸਰਸੋਂ ਦਾ ਸਾਗ) translates into Mustard Greens. However, this creamy and saucy curry also includes greens like spinach ( Paalak – ਪਾਲਕ), fenugreek leaves ( Methi – ਮੇਥੀ), white radish root and greens ( Mooli – ਮੂਲੀ). It is almost always paired with Makki Ki Roti (ਮੱਕੀ ਦੀ ਰੋਟੀ) – an unleavened flatbread made of corn flour (not to be confused with cornflour), dollops of freshly churned white butter (ਸਫ਼ੇਦ ਮੱਖਣ) and some jaggery (ਗੁੜ). It makes for a hearty winter meal!

4. Chhole Bhature

Chhole Bhature is a dish comprising of a spicy chickpea curry ( Chhole – ਭਟੂਰੇ) and giant fried bread ( Bhature – ਭਟੂਰੇ) made of all-purpose flour ( Maida – ਮੈਦਾ). This famous street food has crossed Punjab’s state limits and become a Pan-India sensation. This Punjabi dish has become the food spirit of the national capital New Delhi where it is mainly eaten as Sunday brunch – either ordered in or at a popular local vendor.
